Meatballs

Adapted from Williams-Sonoma:

  • 1/4 cup milk
  • 1 cup plain bread crumbs
  • 3 pounds mixed ground beef & pork (I usually go 1/2 & 1/2)
  • 3 eggs
  • 1/2 cup minced flat-leaf parsley
  • 3 cloves garlic, minced
  • 1 3/4 tsp kosher salt
  • pepper

 

Soak bread crumbs in milk. Add all other ingredients, mix gently. Roll into 1 to 1.5 inch balls. Bake on cooling racks over cookie sheets at 400 20 minutes or so, then freeze.
