Cheesy Quinoa Cakes

From Spoon Fork Bacon, where they’re paired with a lovely roasted garlic-lemon aioli:

  • 2 cups cooked quinoa
  • 2/3 cup grated cheese (originally fontina. I’ve used a lovely mustard-seed laced cheese of some sort with great success. Really, any soft-ish cheese will do.)
  • 3 tbsp flour
  • 2 green onions, chopped
  • 1 egg
  • salt & pepper
  • olive oil, for frying

Combine all ingredients. Shape into patties, pan fry in hot oil. I usually serve with salad, sometimes with an egg.
