Banana Bread

From the back of a bag of almost-too-ripe bananas:

  • 1 stick butter, room temperature
  • 3/4 cup sugar
  • 2 eggs
  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 large, very ripe bananas, mashed
  • 1 tsp vanilla

Cream butter & sugar until fluffy. Add eggs individually, beating well after each. Combine dry ings, add to butter/eggs. Fold in bananas & vanilla. Bake 50-60 mins at 350 in 9×5 loaf pan, or 20ish minutes in mini-muffin tin (makes 24 minis, 12 regular muffins, or one regular loaf.)
